Abstract
The aim of the proposed project: 1.) The development and the introduction of the new molecular methods for the fast detection of the contamination by the technologicaly unwanted acetic acid bacteria in the industrial production of vinegar. 2.) Finding out the specificity of the composition of the bacterial population for the production of the individual types of vinegar (alcohol, wine, apple vinegar). 3.) By the simultaneous following of the chemical parameters (ethanol, acetic acid, aromatic substances) and after the calculation of the yield and productivity in the analyzed processes we will find out the composition of the microbial population having the most appropriate technological characteristics for the production of vinegar.
