Abstract
‘Istrska belica'' is the most extended Olive cultivar in Slovenia. The goal of project is to collect characteristics of istrska belica and colaborated with these data in an international Project for Conservation, Characterisation, Collection and Utilisation of Genetic Resurces in Olive This project will be cofinanced by International olive oil council. For the characterisation is important to collect the following data: morphological, encimatic, genetic and chemical characteristics. An important factor that varies during olive ripening is fruit oil content, chemical composition of the unsaponifiable matter and oleuropeine content which with encimatic reaction is transforming to elenoic acid and hydroksytiyrosol - the most imporatnt biophenolic substance.
