Abstract
In a study of postharvest treatment of apples and cherries with volatile metabolites and antioxidants a positive effect on resistance to physiological diseases and prolonged stability of fruits was found. A method for determination of optimal fruit maturity was found on the basis of non-destructive chromametric measurements of fruit colour (L*, a*, b*) and their chemical and mechanical / reological traits. Chemical composition and nutritive value of beef from domestic breeding of young bulls (two breeds, three muscles – LD, ST, TB) were determined. Results showed significant effect of breed and anatomical part on analysed parameters. Synthesis of CCMP (Cooked Cured Meat Pigment) was performed as substitute of nitrite in meat curing procedure. Stabilisation of CCMP is the object of further investigation. Content of vitamin C (HPLC) was determined in four cultivars of apples (Rubin, NY 61345-2, Granny Smith, Jerseyred) during ripening and storing in normal atmosphere. Results show significant and rapid decrease of vitamin C during first 14 days of storing. Highest vitamin content during storage show cultivar Rubin and NY 61345-2, but Granny Smith is assessed better for other quality parameters.
