The suitability of NIR spectroscopy for quality control purposes has been investigated in the case of dry cured meat products. Predictive models were developed for different parameters of biceps femoris muscle. The best results were achieved for the salt content and the percentage of salt in fresh and dry samples, for moisture, nonprotein nitrogen, intramuscular fat and total free amino acids, while it was not as reliable for protein content and proteolysis index. Based on the results it can be concluded that NIR spectroscopy could serve in process quality control in the certification of protected geographical products like dry ham Kraški pršut.

COBISS.SI-ID: 3503720Fungal species that had been described according to morphological characters can represent complexes of species that can be identified on the basis of molecular sequences only. For Fusarium several phylogenetic marker genes are in use to identify these phylogenetic species. Identifying species correctly is especially important for clinically important and plant pathogenic fungi. For identifying epidemiologically important haplotypes not a single but several gene loci must be sequenced. The described database comprises sequences from the three loci (translation elongation factor 1alpha, the largest subunit of RNA polymerase and the second largest subunit of RNA polymerase). It covers Fusarium species relevant as opportunistic human pathogens and plant pathogens. The database is accessible at http://isolate.fusariumdb.org.
