We have presented the results of fluorescence and EPR study performed on 2 types of model membranes with 4 different flavonoids. The results showed that the tested flavonoids could enter the cell membranes with a passive transport and that the interactions of flavonoids with the lipids of the model membranes are the result of physico-chemical characteristics of a separate compound. We found at least 3 domains with different fluidity after flavonoids entered the membranes.

A method of quantitative zymography of proteases, based on 7-amino-4-methylcoumarin labelled amino acids was developed and optimized. Substrate specificities, pH optima and quantities of peptidases can be determined in crude extracts. The exogenous addition of substrates and the mild conditions of the assay allow sequential staining of the same gel with different substrates.

This microreview focuses primarily on physicochemical properties of polar lipids of (hyper)thermophilic archaea. The essential general features required for lipid membrane of extremophilic archaea to fulfill biological functions are that they are in the liquid crystalline phase and have also extremely low permeability of solutes that is much less temperature sensitive due to a lack of lipid-phase transition and highly branched isoprenoid chains.

The rate of peroxyl radical scavenging in oil-in-water emulsion and the rate of free radical scavenging in polar homogenous medium were estimated for phenolic diterpenes in rosemary (Rosmarinus officinalis) extracts. It was shown that the kinetic approach may give a more comprehensive understanding about the behavior of antioxidants than antioxidant activity determination at a fixed point. Expression of the results in terms of the kinetic approach does not take into account only the activity of an antioxidant but also provide information on how quickly the antioxidant acts.

The antimicrobial and antioxidant activity of commercial rosemary extracts with different polyphenolic compositions (extracts with more polar rosmarinic acid as a major phenolic compound and extracts with less polar carnosic acid as a major phenolic compound) was determined. Reducing power and free radical scavenging effectiveness determined in homogenous polar system was higher in extracts with rosmarinic acid, but in a multiphasic system (aqueous emulsion of linoleic acid) they exhibited lower antioxidant activity than extracts wih carnosic acid.
