Due to the initiative to stop piglet castration, meat from entire male pigs is expected to take important share on the European market which can affect dry-cured ham industry, therefore this study was aimed to compare hams from boars and immunocastrates under two salting regimes. Research has demonstrated negative aspects of the use of entire males for dry-cured ham, quality was more affected in hams with reduced salt content.

The equations for prediction of diet composition on the basis of milk fatty acid composition were developed on the basis of data on 1248 milk samples which were gathered in ten European countries. The most promising were predictions for proportion of fresh forage, hay, maize silage, grass silage, total grassland forage and conserved grassland forage in dairy cow diets. Milk fatty acid composition was able to authenticate the main feeding systems, but failed to authenticate levels of concentrate supplementation and altitude origin of milk. Method is suitable for authentication of special milk production practices, like hay milk or grassland milk.
