Handbook was prepared within the COST action, which aimed to optimise and standardise non-destructive imaging and in spectroscopic methods for determination of carcass and meat quality of different livestock species. Before practical application, all mentioned modern methods need to be calibrated using a reference method. From this reason, the handbook contains methodology of reference determination of meat chemical composition and meat quality traits. Chapters consist of an introductory part with the definition of the trait and the survey of most important factors of variability, followed by description of methodology of determination together with some practical aspects and comparison of reference methods. Handbook comprises also the review of modern non-destructive technologies suitable for in vivo and on-line assessment of live animals, carcasses and meat. One of the chapters describes the calibration and validation procedures and statistical parameters most often used to evaluate accuracy of prediction.
