Abstract
The project anticipates improvement and development of hygienic and technological procedures in production of animal originating foodstuffs with the aim of producing high-quality and safe products competitive at the global market. • Improvement of technology of functional dairy products with high nutritive value and therapeutic, antioxidative and antimicrobial properties; • Improvement of hygiene and technology of meat and meat products, extension of shelf life, introduction of new procedures for quality control and safety; • Improvement of technological procedures in bee, honey, wax and pollen production in order to obtain recognizable products on market; • Introduction and improvement of allergen detection methods in animal originating foodstuffs and development of products intended for persons intolerable to specific food ingredients; • Investigation of food and feed contamination by toxigenic moulds and mycotoxins, possibility of growth inhibition and mycotoxins production using different additives, detoxication of mycotoxins already detected in food and feed; • Insight to diversity of autochthonous microflora in fermented traditional meat and dairy products, determination of potential protective properties; • Determination of physico-chemical parameters and emerging contaminants in waste water of meat industry, comparison of quality, standards and treatment evaluation at national and international level.
