Abstract
Unique samples of tartary and common buckwheat, recently collected in Luxemburg, are the basis of the research project. Molecular-genetic characterisation of samples will be performed to study the possibilities for maintaining the biodiversity of this alternative plant. Interactions of rutin with starch, depending on genetic, ecological and technological conditions, will be investigated. Research will be focused on designing the processing conditions with an aim to rank buckwheat in a special group, ranked as functional food.
