Abstract
There is a need for the determination of possible interactions between macro and micronutrients in the studied samples of tartary buckwheat, common buckwheat and spelt wheat. Interesting aim of this study is also to find possible interactions between polyphenols, proteins and starch, and to study the influence of these interactions for the course of starch digestibility, and bioavailability of polyphenols, especially rutin.
