Abstract
From 1992 on, data on olive oils from Slovene Istria have been collected within the framework of our research projects, our main objective being to compare the oils produced and processed in our country with high quality oils made by globally recognised producers. We wish to supplement the existing database primarily by determining the content of antioxidants of biophenol and tocopherol type - in order to identify separate components - in leaves, fruits and oil of the Istrska belica cultivar.Investigating biophenols (primarily secoiridoid glycosides - e.g. oleuropeine in ligstroside) in the olive-tree leaves and fruits, there are very few data as far as Istrska belica is concerned, which is the reason why we shall attempt to illuminate and develop, within this research project, the sample preparation method (instant freezing in liquid nitrogen, liophilisation) and analytical approaches themselves with characterisation of all oleuropeine and ligstroside species. This kind of research is very extensive all over the world, for the fact is that the trend of affirmation of "typical oils" from separate regions is becoming increasingly great on the world market.
